Pumpkin Chocolate Chip Cookies

These little cookies are super addicting. And tasty. And perfect with coffee. Coffee with some pumpkin spice creamer added to it (or is that a bit overboard?).
It's still 90 degrees outside and I'm posting a recipe for pumpkin chocolate chip cookies. Can you tell I'm in a mood? Is it too early?

I got this recipe from a friend, who got it from some healthy food source.
Wait! Don't stop reading! I don't make healthy food when baking as a general rule, and I eat these because they don't taste healthy at ALL!
Is that so wrong? Don't judge.
And talk about easy. Three little measly ingredients. Four if you count the little bit of water you add.
Mix one can of small pumpkin pie mix with one box of spice or carrot cake mix. In my picture I show a large can because the store was out of small. Ignore that. Add some chocolate chips to taste. Add about a 1/2 cup of water or so, so that it is the consistency of cookie dough.Spoon onto a pan. Cook ten minutes at 375. You will have to add 2 to 4 more minutes than you would when making a normal cookie because it takes the centers longer to cook on these things.Poor yourself some coffee and gorge. Hey, they are supposed to be somewhat healthier than a regular cookie though I can't tell by the amazing taste. I just say that's a reason to eat a couple more at a time, right?
RIGHT.

  1. Those look amazing and just an fyi it's NEVER too early to start eating pumpkin flavored stuff.

    The story about your car stalling out while seven months pregnant made me cringe. They always die under the most inconvenient conditions possible.
